Baked Chicken with Tomatoes and Olives
Serving size for 6 to 8.
1 Tbsp olive oil
4 chicken thighs
4 chicken legs
5 cloves of garlic
1 jar of tomato puree (passata)
1 cup of red wine
½ bunch of thyme
2 bay leaves
2 Tbsp lemon zest
300g cherry tomatoes
1 cup mixed olives
In a French oven on medium heat, add olive oil. Sear chicken on all sides, until skin is crispy and brown.
Add the garlic and anchovies, cook for another 2 minutes.
Add remaining ingredients and place in pre-heated 355F oven and bake for 45 minutes or until chicken is cooked through.
