Savory Feta Stuffed Lamb Meatballs

Ingredients You'll Need:

• 1 lb ground lamb
• 1 small onion, diced
• 1/2 cup breadcrumbs
• 1 egg
• dried mint
• zest of one lemon
• S&P
• 1/3 cup feta, crumbled 

 

1. Combine meat, egg, breadcrumbs, onion, mint, lemon zest and S&P
2. Form into meatballs
3. Create a well with your thumb and stuff a small chunk of feta inside
4. Reseal and reform ball
5. Heat a heavy bottomed pan with a good glug of olive oil over medium heat.
6. Once oil is shimmering place the meatballs in the pan leaving plenty of space to allow them to brown
7. Turn frequently to ensure even browning
8. Garnish with more dried mint and lemon zest if desired
