PROSCIUTTO POTATO SALAD RECIPE!

Dig into this delicious and easy to make dish that will leave your mouth salivating for more! In an inventive twist on what can easily become a boring meal, our Prosciutto Potato Salad Recipe features the rich and salty elements that is so distinct to prosciutto and our very own flavour filled Creamy Mustard Sauce that is such a notch above the typical dressing found in potato salad.

The best part about this recipe is that there is so much room for creativity in regards to how you choose to prepare every ingredient and eventually layer them. While our recipe calls for a more crispy, thicker sliced prosciutto that delivers a rush of flavour, you can absolutely leave it soft or chop it into finer crispy crumbles resembling bacon and you'll still experience a great tasting dish. You can even halve or quarter your potatoes (depending on which ones you have) as opposed to thickly sliced. We think our sauce really ties together all the layering with sliced potatoes but you'll still have great success with drizzled sauce over chunkier potatoes too. Heck...if you like a little more spice, add your favourite hot sauce to our mustard mix.

Fun to prepare and especially great for summer eating, this exciting recipe will be an absolute hit whether you're bringing it to fun get-togethers or serving it for friends and family thanks to the surprising amount of flavour that's found in this often looked over dish!

 

 

Ingredients:

  • 15-20 small potatoes, washed and thick sliced
  • 4 slices prosciutto
  • 1/2 red onion, thinly sliced
  • 1/3 cup red wine vinegar
  • 20 or so black olives
  • fresh tarragon or thyme
  • 2 or 3 TBSP of Creamy Mustard Sauce (recipe below)

 

Steps:

  1. Preheat oven to 375°
  2. Place 4 slices prosciutto on parchment lined baking sheet and bake for 10 minutes
  3. Remove from oven and allow to cool
  4. Combine red onion slices with red wine vinegar tossing to coat
  5. Heat a splash of olive oil in a pan
  6. Cook potatoes on medium heat, stirring occasionally until they are brown on all sides
  7. Heap ingredients onto a platter in layers and drizzle with Creamy Mustard Sauce
  8. Enjoy!

 

Creamy Mustard Sauce Recipe:

  1. Combine 1/2 cup plain yogurt with 1 heaping TBSP of Dijon mustard, 1 heaping TBSP of grainy mustard and 1 heaping TBSP of spicy mustard
  2. Stir well
  3. Add 1-2 tsp fresh thyme

 

Final Thoughts

The bold flavours of the prosciutto, olives, onion, and red wine vinegar is a delicious combination of food, while the creaminess and tangy notes found in our sauce completely tie together all of the ingredients wonderfully!
